Orzo with Parmesan and Basil - Free Recipe!

Summertime is the best time to grow herbs and use them in deliciously healthy recipes!

I am sharing this recipe because it is a family favorite, easy to make, and very light.

The ingredients can be altered to make the dish gluten free or vegetarian.

Ingredients:

2 Tablespoons butter or 1/8 cup olive oil
1 cup uncooked Orzo Pasta (we use Gluten Free)
16 ozs. chicken or vegetable broth
1/2 cup Shaved Parmesan Cheese
1/4 cup Chopped Fresh Basil (my favorite is Greek Basil!)
Salt and Pepper to taste
2 Tablespoons Chopped Fresh Basil

Directions:

1.  Melt butter (or heat olive oil) in a heavy skillet with medium heat

2.  Stir in orzo and saute until it is lightly browned

3.  Pour in chicken or vegetable broth, stir, and bring to a boil

4.  Reduce heat and simmer until orzo is tender and the liquid is absorbed (approx. 20 minutes)

5.  Stir in Parmesan Cheese and Basil (1/4 cup)

6.  Season to taste with salt and pepper

7.  Transfer to a serving bowl/dish, and top with the remaining basil (2 tablespoons), and more Parmesan cheese (if preferred)

Perfect side dishes:  grilled asparagus or sliced tomatoes
